Raw chicken wings share the 1-2 day fridge window common to all raw poultry cuts, and the signs that window has closed are the same across cuts — a distinctly sour or sulfur-like odor, a surface that's turned slimy rather than simply moist, and flesh that's shifted toward gray or developed a greenish tinge rather than its normal pink.
Wings' higher skin-to-meat ratio means the skin itself is often the first place a change in texture shows up, turning noticeably tackier than fresh skin before the meat underneath follows — worth checking specifically given how much surface area skin covers on a wing compared to a larger cut like a breast. Regardless of how fresh they look or smell, wings need to reach 165°F internally to be safe, and that threshold doesn't shift based on how long they sat in the fridge within the safe window. A package date on wings reflects when they were packed, not necessarily when the bird was processed, so treating that date as the start of the countdown rather than assuming extra buffer time is the safer read.
A whole tray of wings bought family-pack style is only as fresh as its least-fresh piece, so it's worth spreading pieces out and checking a few from different spots in the tray rather than assuming one good-looking wing on top means the whole pack is equally fresh.
