Chopped cucumber has one of the shortest fridge lives of any prepped vegetable on this site, typically only 1-2 days, since its structure is almost entirely water held in thin cell walls that break down quickly once cut, releasing that water into the storage container.

A pool of liquid collecting at the bottom of the container, well beyond cucumber's normal wateriness, along with a sour smell replacing its mild, fresh scent, and a slimy texture on the cut surfaces are the clear signs it's spoiled. Because cucumber declines so fast once cut, buying it whole and chopping only what will be used within a day or so, rather than pre-chopping a whole cucumber for the week, is really the more practical approach for this particular vegetable.

A cucumber left unwashed until the moment it's cut, rather than washed and dried right after purchase, holds up a bit longer in the fridge, since any residual surface moisture from an early wash can encourage the sliminess that signals its short window is closing even before the cucumber is actually cut into.

A cucumber's peel, if left on, actually holds in slightly more moisture than a peeled one, so a batch of unpeeled chopped cucumber can hold up marginally longer in the fridge than the same cucumber peeled first, a small but real difference worth knowing.
