How Long Does Evaporated Milk Last?

An unopened can's 6-12 month pantry window comes from standard commercial retort canning, the same high-heat sterilization that gives most shelf-stable canned goods their long safety margin — that window collapses the moment the can is opened and its contents are exposed to air and refrigerator conditions, dropping to just 4-5 days, functionally identical to how quickly regular milk turns once poured from its original sealed container.

Because evaporated milk is concentrated, spoilage signs can be a little more pronounced than in regular milk — a sour smell arrives with a genuinely thickened, almost curdled consistency rather than the more subtle souring regular milk shows first, since there's simply more milk solid per ounce to visibly clump once bacteria start breaking it down. Any separation into a grainy, chunky texture, distinct from evaporated milk's normal smooth richness, is a clear sign to discard the can's remaining contents.

An unopened can that's swollen, leaking, or dented sharply enough to affect the seam should be discarded without opening it, regardless of how far it is from its printed date — that swelling signals internal gas pressure from bacterial contamination that got in during or after canning, a genuine safety issue rather than a simple quality concern, and heating or tasting the contents first is not a safe way to check. A dented can that's otherwise smooth and unswollen, with the dent away from any seam, is generally considered safe by USDA guidance, but a cautious cook may still prefer to pick a different can off the shelf when the option is available.
