Peanut butter's shelf-stable window (6-9 months unopened at room temperature) comes from its low moisture content and naturally antimicrobial fats, but it's not indefinite the way honey or dry sugar is — the fat itself eventually turns rancid, showing up as a sharp, bitter, almost paint-like smell or taste that's genuinely unpleasant rather than merely stale. An opened jar left at room temperature shrinks that window considerably, to roughly 2-3 months, since exposure to air speeds up the same oxidation that eventually affects any fat-based food.

Moving an opened jar to the fridge roughly triples its usable life to about a year, a bigger jump than refrigeration gives most pantry staples, which is worth doing for anyone who goes through a jar slowly. Some oil pooling at the surface of a natural jar is completely routine and simply reflects that the product hasn't been stabilized with added emulsifiers — a quick stir brings it back together — but oil that's turned cloudy, discolored, or smells distinctly off is a genuine sign of rancidity, not ordinary separation. A firm, chilled jar straight from the fridge can be harder to stir or spread until it sits out for a few minutes, a minor inconvenience worth trading for the considerably longer window refrigeration buys. A jar kept in a cabinet near a stove or in direct sunlight declines faster than one stored in a cool, dark pantry spot, since heat speeds up the same fat oxidation that eventually turns any jar rancid regardless of brand or style.
