A strong sulfurous smell, sharper and more noticeable than cabbage's normal mild scent, along with dark, wet spots developing among the shreds and a slimy texture when handled, are the signs it's spoiled. Because shredded cabbage is often bought pre-bagged for convenience rather than shredded at home right before use, checking the package's sell-by date alongside these physical signs is worth doing, since a bag sitting on a store shelf may already be partway through its short usable window before it's even purchased.
A whole head of cabbage, kept in the crisper drawer with its outer leaves intact, can last several weeks — peeling back and using only the outer leaves as needed, rather than shredding the entire head at once, is the more practical approach for a household that won't use up a full head of shredded cabbage within its short window.
