Mold that isn't part of a normal aged-cheese look, an ammonia-like smell, or a slimy texture on the shreds are the real signs a bag has turned — distinct from the dry, slightly hardened texture shredded cheese naturally develops toward the end of its good window, which is a quality change rather than spoilage. Pressing the air out of the bag and resealing it tightly, or transferring it to a proper zip-top bag if the original packaging doesn't reseal well, meaningfully slows how fast an opened bag dries out and picks up other smells from the fridge. Buying a smaller bag sized to what a household actually uses within two weeks, rather than a large bag that sits half-used for over a month, is a simple way to stay ahead of both the drying and the mold risk. A bag that's turned noticeably darker or oilier-looking at the surface, without any of the other signs above, is usually just oxidation from repeated air exposure rather than a food-safety concern, though the flavor and melt quality by that point are worth a closer look before using it in anything delicate.
