Unsweetened almond milk's 7-10 day opened fridge window is fairly typical among the refrigerated plant milks on this site, though a shelf-stable, aseptically packaged carton (the kind sold unrefrigerated on a regular grocery shelf until opened) can sit unopened for months longer than a standard refrigerated carton before the same 7-10 day countdown starts once it's finally opened.

Because almond milk lacks dairy milk's natural pH buffering and protein structure, a carton nearing the end of its window can turn noticeably faster than dairy milk once it actually starts to go — a sour smell, a curdled or chunky texture when poured, or unusual thickening are the signs worth checking, especially in the last couple of days of that 7-10 day stretch.

Giving the carton a good shake before each pour matters more for almond milk than for dairy milk, since its plant solids and added calcium fortification can settle out over a few days sitting in the fridge — that settling is a normal, harmless texture quirk rather than a spoilage sign, distinct from a genuinely curdled or lumpy texture that doesn't smooth back out with shaking. A homemade almond milk, blended fresh from soaked almonds and strained rather than store-bought, tends to have an even shorter window than a commercial carton — typically just 3-4 days — since it lacks the stabilizers and pasteurization step a commercial product goes through before packaging.
